FILIPINO LECHE FLAN

Ingredients:
*1 can (390g) evaporated milk
*1 can (390g) condensed milk
*10 egg yolks
*1 teaspoon of vanilla extract or lemon essence

For the caramel:

*1 cup sugar
*3/4 cup water *

Leche Flan Method:

* Prepare first the caramel by mixing water n sugar in a sauce pan. Boil until sugar becomes caramelize.
*Pour the caramelized sugar into aluminum moulds and evenly spread the caramel.
* In a bowl mix well the evaporated milk, condensed milk, egg yolks and vanilla.
*Gently pour the mixture on top of the caramel on the aluminum moulds. Fill the moulds to about 1 to 1 1/4 inch thick.
Cover moulds individually with aluminum foil. Then steam for about 20min or bake for about 45 minutes. Before baking the Leche Flan, place the moulds on a larger baking pan half filled with very hot water. Pre-heat oven to about 370 degrees before baking.
*Let cool then refrigerate.
To serve: run a thin knife around the edges of the mould to loosen the Leche Flan. Place a platter on top of the mould and quickly turn upside down to position the golden brown caramel on top. *

POTATO PARATA

Ingredients
6 big parata's

For Stuffing
*Potato -2 Medium Big(Boil potatoes , Smash well)
*Garlic -5 (Finely chopped)
*Green Chilly or Thai Chilly -3 (Finely chopped)
*Spinach or Mint or Coriander leaves -1/2 cup (Finely Chopped)
*Salt to taste

For Dough
*Wheat Flour -1 &1/2 Cup
*Salt to taste
*Olive oil - 1/2 spoon

To Prepare:
1)First Knead the dough adding salt and water. Later pour oil and Knead for few seconds and keep it aside with lid for 15 minutes. Later make 6 ba11s out of it. The ball should be bigger than usual chapati ball.
2)Mix all the ingredients given For Stuffing in a bowl. Smash potato well before mixing it with other ingredients. Next taste for salt and spice. Make 6 big ba11s out of it.
3)Now take a wheat ball and make it flat for about 6 inch. Next place the stuffing ball in it and fold.
Repeat the same process for all the above. Leave them for 5 minutes. Next cover them with wheat flour and place it in the board to roll folded side facing down. Roll them to flat if required sprinkle flour on it. Repeat the same for all.
Heat tava or flat pan ,now dribble oil in it. Transfer the flat dough slowly to tava and toast it well adding olive oil in it. Hot and spicy potato stuffed parata is ready to serve with curd and pickle (Optional).

CHICKEN BIRYANI
WOT U NEED...
1-2kg chicken
1kg basmati rice
100-150g yoghurt
3-4tsp salt
1 med onion
1tbs ginger
6 garlic cloves
12-16 green cardamom
1 1/2-2tbs garlic paste
16-20 cloves
1 cup oil
2-3 tbs kewra
1tsp sugar
1 pinch saffron
1/2 tbs lemon juice

METHOD...
1. add chicken, salt & garlic cloves in a pot with 1 glass of water
2. cook on low flame till meat is tender n water dries
3. take 1 medium onion slice n fry i oil till light brown
4. add remaining spices, yoghurt n fry a little thn add meat
5. soak rice in water for abt 1/2 hour thn boil with salt and lemon juice till 3/4 cooked drain water
6. transfer a little rice to a pot thn add a little meat masala combo to make layers of rice n meat keeping rice at top n bottom
7. sprinkle on kewra, sugar n saffron soaked in 1tbs milk or water
8. cover n cook on low flame or abt 10 min keeping pot tightly shut wen rice is cooked bhiryani is ready to sereve *

CHICKEN MAKHANI
INGREDIENTS
4-5 chicken
1tsp chilli powder
1tsp lemon juice
1tsp b*tter
salt to taste
MARINADE
2tbs yogurt
1tbs ginger
1tbs crushed garlic
1tsp red chilli powder
1tsp mustard oil
1tsp lemon juice
1tsp garam masala
1tsp salt
MAKHNI SAUCE
1/2 tsp garam masala
2tsp sugar
1/2tsp chilli powder
400g tomato puree
1tsp ginger
1tsp garlic
1/2tsp fenugreek
500g b*tter
2 green chillies
1/4tsp salt *

METHOD
1. add mixture of chilli powder, lemon juice n salt to chicken leave for 30 mins
2. mix chilli powder, salt, garlic, ginger, lemon juice, garam masala n fenugreek
3. combine spices n yogurt marinade chicken thoroughly n leave for 3hrs
4. skew chicken cook on 425-450F for 8-15 mins turn every 5 mins until cooked through n a bit toasted
5. heat b*tter in med sized pan add garam masala wait ill crackles add ginger n garlic add green chillies cook for 2 mins add tomato puree, chilli powder, garam masala, salt, 1 cup of water boil reduce heat simmer for 10mins add sugar n fenugreek
6. add chicken simmer for 5 mins add creme n sereve *

Sis it's rly nice knowing this new chicken recipe from you. :). i bet I shld try ths at home too :), I hvnt tried tried marinating chicken with yogurt yet. Usually here in my country we oftn use fresh milk or coconut milk. It sounds really spicy n yummy n the b*tter n spices really compliments the flavor hmmmm.. *

TANDOORI CHICKEN PIZZA

INGREDIENTS
2tbs tandoori paste
1tbs natural yoghurt
1tbs finely chopped mint
1/4tsp salt
250g bonless chicken breast cut in 1cm peices
1 pizza base
1/4 cup tomato paste
75g mozzarella

METHOD
1. pre heat oven to 220c
2. combine tandoori paste, yoghurt, mint n salt in a bowl
3. add chicken pieces to mixture coat chicken well leave to marinate for 1hr
4. put pizza base on oiled tray. combine remaining tandoori paste with tomato paste n spread over pizza base
5. add chicken top with mozzarella
6. bake at 220c for 10 mins thn lower to 200c n bake for another 5-8mins until pizza crust is crisp remove frm oven n sereve

YOU CAN ALSO ADD YOUR OWN CHOICE OF VEGGIES ON PIZZA AT STEP 5.... ENJOY ;-) *

FILIPINO CHICKEN MACARONI SALAD

Chicken Macaroni Salad Ingredients:

*1/5 kilo macaroni noodles
*2 to 3 pieces, medium sized carrots
*1 big chicken breast
*500 ml of mayonnaise
*836 g pineapple chunks
*1 big white onion, finely chopped
*1/2 cup sweet pickle relish
*3 hardboiled eggs, diced
*1 cup diced cheddar cheese
*1/2 cup raisins
*salt and pepper to taste

Macaroni Salad Cooking Instructions:

1)Cook macaroni noodles according to package cooking instructions.
2)In a pot, boil carrots in water for 15 to 20 minutes or until cooked.
3)Drain carrots and let cool. Peal skin then dice.
4)Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths
5)Add pineapple chunks n combine all ingredients while adding salt and pepper, to taste.
6)Refrigerate, then serve.

NIHARI

WOT U NEED
1/2kg beef
1 1/2tsp salt
1/2tsp chilli powder
1/2tsp kashmiri chilli powder
1/4tsp turmeric powder
1tbs corianer powder
1 1/2cup oil
3tbs white flour
1tsp ginger paste
1tsp garlic paste
1 inch ginger
2tbs corriander leaves
3-4 green chillies
NIHARI SPICES
2tbs fennel
1/2tsp c*min seeds
2 green cardomom
10 cloves
2 black cardomom
1 stick cinnamon
1 bay leaf
1/4tsp nutmeg & mace
2tbs corriander seeds
1 stick
1 aniseed flower *

METHOD

put 1/2 cup oil in a pot add meat & fry a while
add salt, chilli powder, turmeric powder, corriander powder & ginger paste add a little water mix well
dissolve white flour in 1 cup water add to meat & bring to boil
grind all nihari spices put all ground spices in a fine cotton cloth tie & add to meat
add 5-6 glasses of water cover and leave to tenderize on low flame
when meat has softened remove the bundle of spices & cook the curry to desired consistancy
garnish with some fried onions fresh ginger & green chillies *

SHEER-MAAL
WOT U NEED...
2cups flour
1/2tsp salt
1/8tsp saffron
1 3/4cups milk
1tsp sugar
1cup melted b*tter

METHOD
1. stir flour with salt in a large bowl
2. in 1 1/2 tbs of milk, dissolve the saffron and set aside
3. heat the remaining milk in a pot with the sugar until the sugar is dissolved, allow the milk to cool
4. make a well in the flour, pour in cooled milk & mix well until soft dough is formed
5. cover the dough with a warm damp cloth & set aside for 10 mins
6. add a little melted b*tter to the dough, kneed until all the b*tter in mixed in
7. divide the dough into 12 parts cover with damp cloth and set aside for 10 mins
8. pre heat oven to 350c
9. roll each part of dough to make 6 inch circles
10. using a fork holes all over circles, place on a greaced baking tray
11. bake for abt 4mins thn brush with milk n saffron mixture & bake 4 another 4 mins
12. brush with a little b*tter n serve hot *

ALMOND KULFI
wot u need...
blanched almonds 250g
milk 1.8ltrs
caster sugar 250g
double cream 300ml
rose water 2tbs
rose petals to serve optional *

METHOD...
cover the almonds with cold water n set aside. reserve 300ml of milk n bring the rest to the boil in a pan simmer until reduced by half stiring time to time.
drain the almonds whizz 3/4 of thm in a food processor with the reserved milk until roughly ground. add the mixture n sugar to the hot milk simmer for 10-20min stiring constantly remove from heat n cool to room temp thn chill well in the fridge
chop the remaining almonds roughly add 2 the chilled mixture with the double cream n rose water stir thoroughly. pour in moulds n freeze until solid. transfer to fridge for 20 mins before serving decorate with rose petals *
